Sharp and Cherry Chia Pudding

Ingredients

  • 1 cup (150 g) sharp cherries, frozen
  • 1 cup of coconut milk (120 ml)
  • 1/4 cup (30 g) chia -seeds
  • 1/4 cup (60 ml) Cake juice
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of land cinnamon

Optional garnishes

  • Sharp dried cherries
  • Dark chocolate chips or cocoa nibs (if necessary certified gluten-free)

Instructions

Combine the chia seeds, cherry juice and coconut milk in a small bowl. Stir well, soak the mixture for at least 30 minutes, or until the chia seeds have absorbed most of the liquid and formed a thick gel.

Transfer the soaked chia mixture to a food processor or a fast blender. Add the remaining ingredients and mix until smooth and creamy.

Spoon the pudding into serving dishes, glasses or cups. Garnish with chocolate flakes and extra sharp cherries – fresh, frozen or dried – as desired.

Enjoy chill immediately before serving for a firmer texture.
