Sharp and Cherry Chia Pudding
Ingredients
- 1 cup (150 g) sharp cherries, frozen
- 1 cup of coconut milk (120 ml)
- 1/4 cup (30 g) chia -seeds
- 1/4 cup (60 ml) Cake juice
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of land cinnamon
Optional garnishes
- Sharp dried cherries
- Dark chocolate chips or cocoa nibs (if necessary certified gluten-free)
Instructions
Combine the chia seeds, cherry juice and coconut milk in a small bowl. Stir well, soak the mixture for at least 30 minutes, or until the chia seeds have absorbed most of the liquid and formed a thick gel.
Transfer the soaked chia mixture to a food processor or a fast blender. Add the remaining ingredients and mix until smooth and creamy.
Spoon the pudding into serving dishes, glasses or cups. Garnish with chocolate flakes and extra sharp cherries – fresh, frozen or dried – as desired.
Enjoy chill immediately before serving for a firmer texture.
