Ditched the store and go do-it-yourself with this tasty carrot and dried fruit energy lanes. Keep them in the fridge for a sweet snack without refined sugar and a healthy dose of fiber.

This is a great snack if you are looking for a long walk or other persistent physical activity. The carbohydrates immediately offer energy, while the fat gives you energy all day. This is also useful if you are looking for a filling snack in the middle of the day without the sugar high and crashes many snack bars that you give.

Carrot Cake Energy Bars

Ingredients

  • 3/4 cup (60 g) rolled oats
  • 1/2 cup (54 g) seized almonds
  • 1/2 cup (60 g) Walnut -pieces
  • 3/4 cup (83 g) carrots, grated and stocky dry with paper towels
  • 3/4 cup (120 g) pit medjool dates
  • 1/2 cup (30 g) roasted unsweetened dried coconut
  • 1/4 cup (40 g) dried pieces of pineapple
  • 2 teaspoons orange peel
  • 1 1/2 teaspoon of soil cinnamon
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt

Instructions

Preheat the oven to 350 ° F (180ºC). Place the oats, almonds and walnuts on a rande baking tray and bake to lightly roasted, 10 minutes. Set aside and let the mixture cool.

Put the carrots, dates, coconut, dried pineapple, orange peel, cinnamon and salt in a food processor and pulse until the mixture is well chopped and a ball forms, about 30 pulses of 1 second. Add the oats and the nut mixture and the process and stop to scrape the sides of the bowl once or twice, until the nuts are finely ground for 2 minutes.

Line a 5-Bij-9-inch (13-at-23 cm) bread pan with plastic film. Press the date mixture evenly in the pan. Cover and put in the refrigerator until the mixture feels firm, about 2 hours. Cut in 8 bars and wrap in plastic wrap individually. Store the bars in the fridge for a maximum of 2 weeks.
